According to the Centers for Disease Control (CDC), garlic that is contaminated with a pathogenic microorganism will still be safe to eat as long as it has been cooked properly.

The CDC says that “there are four groups of microorganisms usually considered pathogens: bacteria, viruses, parasites, and fungi. Microorganisms that cause foodborne illness are generally referred to as pathogens.

Although most people associate foodborne illness with bacteria, viruses and parasites are also the cause of many foodborne illnesses. Fungi can also cause illness, although they are not normally considered pathogens because they do not cause disease in healthy individuals.

In a few cases, ingestion of certain types of fungi has caused death. Illness associated with the ingestion of fungi is often referred to as mycosis.

Some common pathogens may be present naturally in soil or water and can be carried by animals, people, equipment, or food products.

According to the Food Standards Agency, “For healthy adults, it is unlikely that they would get ill from eating raw garlic. Some people do find raw garlic irritates their stomach and others may experience some mild symptoms such as flatulence; this is due to the hydrocyanic acid content of raw garlic. Cooking garlic reduces the amount of hydrocyanic acid.

Although outbreaks due to raw garlic have not been reported to the FSA, there are some reports of bacteria present in the soil making their way into the bulbs. This has been attributed to poor hygiene when handling and harvesting.”
